Heritage Meats is an artisan butchering company that specializes in organic, locally grown and sustainable meat products and services. They are a certified USDA meat processor and also a Charter Member of the Puget Sound Meat Producers Cooperative.
Heritage Meats is owned and operated by Tracy Smaciarz. His father, Tom Smaciarz, acquired his meat-cutting skills growing up on a farm slaughtering and processing the livestock. In 1968 Tom turned those skills into a career as a meat cutter for Safeway. Knowing he wanted to have his own business someday, he began purchasing meat equipment and cutting beef, game and making sausage for friends and family.
In 1977, East Olympia Meats officially opened. By 1989 Tom had retired from Safeway and East Olympia Meats became his full-time job. From the very beginning Tracy was by his side, learning his father’s skills. After 19 years of successful business, Tom put away his knives and handed the business over to Tracy. Having outgrown the location in East Olympia, WA, he relocated the business to Rochester, WA and in turn renamed the company Heritage Meats.
A lot of things have changed over the life of the family business, but the quality and pride that goes into their work remains the same.
