Three Great Ways to Cook Asparagus
Since it’s coming on spring and these tender green shoots are going to be gracing our lives just a bit more, here are three quick and delicious ways to cook asparagus:
Grill those babies up! Just a light brush with oil, sprinkle with salt and pepper and use a pair of tongs to put on the grill. But how do you keep them from dropping between the grate to a fiery death below? Stick two skewers in. Easy to handle and great for basting. Wait until just browned then flip.
Seriously, steam it. If you don’t have a steamer you can place a microwaveable bowl upside down in the bottom of a pot of water and a plate on top that just fits into the pot. Bring to a boil and throw the asparagus on top of the plate. Cover and steam until tender-crisp. Tender-crisp, what is this you ask? Grab a cooking spear and holding both ends, bend them towards one another. The spear should flex and then break crisply. Perfect.
Oh Yes, let us not forget the gentle sauté. Whether in butter with garlic, or with olive oil, fresh cooked linguine, capers and preserved lemon, sautéing is a quick and easy way to make a bright spring dish. Just be careful not to overcook. Slice on the bias (see above) for a nice presentation. Adding them in towards the end of your dish, a few minutes before serving, will assure that they are fresh and tasty.
