Producer Profile: Heritage Meats
Bringing delicious, sustainably grown meats to our members takes a number of key partnerships. We source our beef from responsible growers, who pasture raise their cattle and always feed them diets appropriate to their species. That means 100% grass-fed, no corn, no GMOs and no preventative antibiotics.
Likewise with our lamb, pork and chicken producers, we always source from sustainable, reliable and responsible suppliers like Skagit River Ranch, Evergreen Students For Sustainable Animal Agriculture and Mary’s Chicken.
One of the other key partners in bringing sustainably grown meats to your table is Heritage Meats in Rochester, Washington. Heritage Meats is an artisan butchery that specializes in organic, locally grown and sustainable meat products and services. They dry age all their beef for 14 days for enhanced flavor, and cure and hand-cut all of their beef and pork. They are a certified USDA meat processor and also a Charter Member of the Puget Sound Meat Producers Cooperative.
Heritage Meats is owned and operated by Tracy Smaciarz. His father, Tom Smaciarz, acquired his meat cutting skills growing up on a farm slaughtering and processing the livestock. In 1968 Tom turned those skills into a career as a meat cutter for Safeway. Knowing he wanted to have his own business someday, he began purchasing meat equipment and cutting beef, game and making sausage for friends and family.
In 1977, East Olympia Meats officially opened. By 1989 Tom had retired from Safeway and East Olympia Meats became his full time job. From the very beginning Tracy was by his side, learning his father’s skills. After 19 years of successful business, Tom put away his knives and handed the business over to Tracy. Having outgrown the location in East Olympia, Washington, Tracy relocated the business to Rochester and in turn renamed the company Heritage Meats.
A lot of things have changed over the life of the family business, but the quality and pride that goes into their work remains the same. It’s this quality, this attention to detail and pride in a job well done that makes Heritage Meats a key component in our sustainable, local, and healthy food system.
You can add Heritage Meats products: sausages, steaks, ground beef and much more, to your weekly delivery from our easy online grocery.
