4 Spring Brunch Recipes
With the sun breaking through the clouds and Easter on the horizon it’s time to start breaking out the spring brunch recipes. Whether you’re hosting a gathering of friends or family, or just bringing something to a potluck, here are four delicious recipes for any brunch.
When I’m thinking brunch, the first thing that comes to mind is quiche. From veggie-filled shells of asparagus, chives, broccoli and leeks, to meaty ensembles of bacon, sausage, chorizo or prosciutto. Start with this basic recipe and make it your own.
While sunchokes have been coming out of the ground for a few months now, mixing them with celeriac and fresh herbs gives them a new flavor that is perfect for an early spring brunch. Try adding some chives or green garlic to bring out the spring flavors.
Since poblano peppers are available now, thanks to a nice heat wave down south, chile rellenos are in order! These delicious chiles can be stuffed with jack cheese, dipped in egg batter and fried golden brown. Just serve with enchilada sauce and you’ll have one delicious addition to spice up your brunch.
Frittatas are known as the crustless quiche and can be made with potatoes, sausage, leeks, yams, green onions, green garlic, or whatever ingredients you happen to have on hand. Excellent for making the night before and just warming the day of the brunch. Serve with a simple arugula pesto or chimichurri for a little spice.
