Purple Viking Potatoes from Rainshadow Organics
Members may have had an exciting addition to this week’s box – Purple Viking Potatoes. These delicious potatoes come to us from one of Organically Grown Company’s Ladybug Brand growers Rainshadow Organics.
A second generation farm located fifteen miles Northeast of Sisters, Oregon, they grow a variety of vegetables in their high desert environment, along with poultry, pork and beef. An incredible example of a sustainable farm, Rainshadow Organics uses a variety of methods to provide nutrients to their soil
“Our soil fertility is built with our composted horse manure. We also employ our chickens and an army of worms who supply castings for worm tea that we inject into our irrigation system. We foster an intricate ecosystem with companion planting, nutrient cycles, flowers, bees, riparian areas, crop rotation, and undisturbed native desert. We also collect waste fryer oil from local restaurants, then recycle it to run our delivery truck on. We pride ourselves on looping our nutrients and resources into our community and back to our land.” Sarahlee Lawrence
Operated by second generation farmer Saralee Lawrence and her husband Ashanti Samuels, along with being certified organic and focused on sustainability, they understand the benefits of growing unique and heirloom varietals. One of their recent harvests brought us the delicious Purple Viking Potato.
Sarahlee had this to say about these stunning potatoes, “This is a real potato-lovers potato. The stunningly beautiful purple potato has flecks of pink in the skin and pure white flesh. Moist and firm, Purple Viking has a divine flavor and adapts to all cooking methods. Of those who try it, most will fall in love with the taste no matter what kind of dish it is prepared for. Purple Viking excels as mashed potatoes, giving them a unique fluffy texture and smooth, buttery taste that pleases with every bite. This variety is a great way to bring unexpected colors to your potato dishes.”
Lindsay Duff, Chef of Jackson’s Corner in Bend Oregon called out these potatoes as a favorite of his, noting their versatility for fall and winter cooking, and of course their sweet and fluffy white flesh beneath the vivid purple exterior. We’re excited to have them in this week’s order (at least for our Pacific Northwest and Alaska members, our California members may have to make do with the Yukon’s for now) and can’t wait to see what other great things we get from Organic Grown Company.
