For the Love of Grains
I’m in love, I’m in love, and I don’t care who knows it!
Although Buddy the Elf was talking about a girl named Jovie, I have the same spirit of love, even though my love is for ancient grains. Sure, there are loads of ancient grains, each with its own special and delicious attributes, but my major ancient grain crush is Kamut® khorasan wheat. At Baia Pasta, we produce brass-extruded, organic pasta (including Kamut® khorasan wheat pasta) by mixing two ingredients: organic flour and water. That’s it. So, why do I love Kamut® khorasan wheat pasta? Let me count the ways:
1. I love the preservation involved for this heritage wheat.
Any khorasan wheat grown under the trademark Kamut® (which roughly translates to “soul of the earth”) is certified organic ancient wheat and 99% free of modern wheat, which is often bred to have certain qualities like disease or drought resistance or to produce higher yields. I absolutely love knowing that corporate labs have not altered the grain in any way–absolutely no genetic modification or hybridization! Isn’t it awesome knowing there is a group actively preserving the heritage of a grain, ensuring there will be wholesome, organic grains for future generations grown right here in the US (Montana)?
2. I love that it is so nutrient dense.
Holy nutrients, Batman! Higher levels of protein, selenium, zinc, magnesium and lipids? Yes, please! I believe in getting nutrients from foods instead of synthetic vitamins. The trace minerals in Kamut® khorasan wheat pasta helps with healthy cellular and immune function, the higher lipids produce more energy in the body and the protein is a no-brainer. Add a bunch of veggies from your Full Circle box and another optional protein source and you’ve added antioxidents, phytochemicals and a cocktail of other vitamins and minerals. Your body will thank you.
3. I love that more people can enjoy pasta.
Kamut® khorasan wheat pasta is a great choice for people who are trying to reduce gluten consumption, who have sensitivities to modern-day wheat or who need to maintain lower blood sugar levels. Although Kamut® khorasan wheat is not gluten-free (it is a wheat, after all), it is gluten-less. Not only that, it is low on the glycemic index. So, unlike traditional semolina pasta, more people can enjoy this whole grain pasta. And really, who doesn’t enjoy pasta?
4. I love the flavor and texture.
For a whole grain, Kamut® khorasan wheat pasta has an uncharacteristically smooth texture and mild flavor. It has a beautiful golden-brown color and a buttery, toasted nutty flavor with hints of sweetness. Any dish you would make with traditional semolina pasta can easily be substituted with Kamut® khorasan wheat pasta. Although it doesn’t have the same elasticity as semolina pasta, it still has an incredible texture. When cooking pasta, always bring a large pot of water to boil, salt it generously and then add your pasta and cook until al dente. Guaranteed deliciousness every time.
Add Kamut® khorasan wheat pasta to your diet and you’ll be grinning from ear to ear because your body will be happy and you’ll be goofy in love like I. Trust me, it’s a great feeling.
