Unlike the true Korean style, Firefly left out the fish sauce and shrimp paste making this kimchi the perfect vegan treat. They chop, grate, shred, stir and press. High mineral sea salt and nature do the rest. After 4 weeks in a fermentation tank each jar is hand-packed and is a delicious healthy treat that is raw alive and full of the nutrients your body craves daily. Not certified organic.
About the producer
The planning for Firefly Kitchens began in 2009. Julie O’Brien and Richard Climenhage (co-owners) wanted to create foods that were healthy, nutrient dense and tasted great. One year later, the company was formed with a focus on naturally fermented foods.
