Strawberry Shortcake

Strawberry shortcake is a quintessential summer dessert. Adding a small amount of sugar to the cut berries helps to pull their juices out, almost creating a strawberry syrup. Feel free to add any other berries you might have on hand, too!

INGREDIENTS

6 cups sliced strawberries

1/4 cup + 2 tablespoons sugar, divided

2 cups all purpose flour

2 teaspoon baking powder

1/2 cup butter

1 beaten egg

2/3 cup milk

1 cup whipping cream, whipped to soft peaks

 

INSTRUCTIONS

Preheat oven to 450 degrees F. In a small bowl gently stir together the strawberries and 2 tablespoons sugar, set aside. Stir together the flour, baking powder and 1/4 cup sugar. Add butter, and cut in using a pastry blender, or fork until mixture resembles coarse crumbs. Combine egg and milk and add to flour mixture. Stir lightly until just moist. Drop dough into 8 mounds on an ungreased baking sheet, and flatten with the back of a wooden spoon to 3/4 inch thick. Bake until golden brown, about 10-12 minutes. Remove from oven, and allow to cool completely. To assemble, place shortcakes on plates, top with strawberry mixture and whipped cream, and enjoy!
