Strawberry Lemonade

This lemonade is the perfect refreshment for even the hottest of days. And the addition of strawberries makes it extra summery! Best when made a day ahead so it has plenty of time to chill.

serves 18-20

INGREDIENTS

12 cups water

3 cups sugar

6 lemons, zest and juice

8 cups fresh strawberries, hulls removed

INSTRUCTIONS

Place water in a large pot, and stir in the sugar. Bring to a boil over medium-high heat, stirring occasionally until all sugar dissolves. Turn heat to low, and add the zest of the lemons (be careful not to grate the whites of the lemons, just the outer yellow zest). Cut the lemons in half and juice them into the pot. Don't worry about the zest, seeds or pulp, the lemonade will be strained later. Fill blender with strawberries. Use the pulse or low setting to puree the strawberries (using a higher setting will make them foamy, so resist the urge to turn the blender higher). Do this in batches if necessary. Add blended strawberries into pot of lemonade. Stir and allow to simmer for a few minutes. Allow lemonade to cool enough so that it is easier to pour, then pour through a large mesh stainer to remove all seeds, pulp, and berry pieces. Allow to cool to room temp and then chill in refrigerator. Serve over ice.
