Citrus Salad

This salad is almost too pretty to eat… almost! The soft, sweet citrus combined with creamy avocado, and crunchy radishes and pistachios is truly divine.

SERVING SIZE

serves 2

INGREDIENTS

2 grapefruit

6 oranges, any kind

2 blood oranges

1 Meyer lemon

3 radishes, thinly sliced

1 avocado, chopped

1/4 cup pistachios, shelled and chopped

1/4 teaspoon salt

1/8 teaspoon black pepper

2 teaspoon olive oil

INSTRUCTIONS

Peel all of the citrus with your knife by cutting off a small piece from both ends. Stand fruit up on one end and begin running your knife down the sides, curving around the fruit as you go to remove the skin and white pith. Then slice citrus into rings.

Spread slices out on a plate, top with radishes, avocado, and pistachios.

Finish with a drizzle of olive oil, and a sprinkle of salt and pepper to taste.
