Grilled Pizza

Grilling pizza is a fun way to get that wood-fired flavor, without installing a pizza oven! Invite friends over for a pizza party, and provide a variety of toppings for them to create their own masterpieces.

SERVING SIZE

serves 6-8

INGREDIENTS

1 pound pizza dough, halved

1/2 cup of your favorite pizza sauce

1 1/2 cups toppings, mushrooms, pepperoni, olives

2 cups shredded or sliced fresh mozzarella cheese

1/2 cup grated Parmigiano-Reggiano or Romano cheese

Salt and pepper

Olive oil

Cornmeal

 

INSTRUCTIONS

Start by preheating your grill - the hotter the better, but make sure you keep a keen eye on the pie! Make sure your dough is room temp before attempting to stretch or roll it out, this will make it less elastic and easier to shape. Stretch or roll the dough to the desired size and place the dough on a sheet pan dusted with cornmeal. If using a pizza stone, follow manufacturer's instructions.(smaller pizzas are easier to manage on the grill). Spread with a tablespoon or two of sauce, toppings and cheese, sprinkle with salt and pepper and a drizzle of olive oil. Slide the pizza onto the grill and cook it until the crust is brown and beginning to crisp and no longer sticks to the grill. Then cover, leaving the grill vented and cook for another 4-5 minutes, or until cheese is melted and ingredients are hot. Remove carefully, let cool slightly, cut and serve.
