INSTRUCTIONS

Heat the olive oil in a Dutch oven over medium-high heat. Add onions and sauté for 5 minutes or until tender. Stir in the pepper and salt and reduce the heat to medium. Continue cooking for 20 minutes, stirring occasionally.

Increase the heat to medium-high and sauté for 5 more minutes or until the onions are golden brown. Stir in the wine and Worcestershire, and cook for 1 minute. Add the broth and thyme. Bring the mixture to a boil; cover, reduce heat and simmer for at least 2 hours.

Preheat broiler.

Place the bread slices in a single layer on a baking sheet and broil 2 minutes or until toasted, turning after 1 minute. Place 8 ovenproof bowls on a sheet pan. Ladle 1 cup of soup into each bowl. Top each serving with 1 slice of bread and 1 cheese slice. Broil 3 minutes or until cheese begins to brown. Serve immediately.
