Quick Peach Sorbet

This peach sorbet is summer in a scoop! And because the main ingredient is frozen peaches, you can stock your freezer with fruit during the summer, and make it anytime you are longing for warmer days!

INGREDIENTS

6 large, ripe organic peaches

3/4 cup sugar

1 teaspoon lemon juice

Pinch of salt

INSTRUCTIONS

Peel and slice peaches, removing the pits, then place in a single layer on a sheet pan, and freeze until firm. Place frozen peaches, 3/4 cup water, sugar, lemon juice and salt in a blender or food processor, and blend until creamy and smooth. Eat immediately soft-serve-style, or freeze in a loaf pan up to 3 days.
