Curried Chicken Salad with Black Grapes

INGREDIENTS

2 chicken breasts

2 stalks of celery

1 cup grapes

2 Persian cucumbers

1 carrot

2 scallions

1/2 cup organic mayonnaise or mayo substitute

1 teaspoon apple cider vinegar

1 teaspoon curry powder

1/4 teaspoon turmeric

salt to taste

 

INSTRUCTIONS

1. Fill a medium sized pot halfway with water and add chicken breasts.

2. Bring to boil and cook chicken until done, about 10-15 minutes.

3. (You can cut into the chicken to make sure it is done in the middle.)

4. Pour out hot water and fill pot with cold water to cool chicken.

5. When the chicken has cooled down, cut into bite sized pieces.

6. Chop all vegetables.

7. Slice grapes in half lengthwise.

8. Put all vegetables, grapes, and chicken into a large bowl.

9. In a small bowl, mix mayo, vinegar, and spices.

10. Mix well.

11. Add dressing to the large bowl ingredients and toss to coat.

12. Serve chilled.
