
This salad is easy to make and a perfect side for any summer night, especially a party or BBQ.
INSTRUCTIONS
Preheat the grill to medium-high heat.
Brush the ears of corn with olive oil and grill, turning frequently until charred kernels start to appear, about 5 minutes. Remove from the grill and allow to cool slightly until they can be handled. Cut off the kernels into a large bowl.
In a small bowl, whisk together the olive oil, vinegar, salt and pepper. Pour over the corn and toss to coat. Add in the tomatoes, feta and chopped basil. Toss to coat.
Sprinkle more feta and basil over the top and serve.
