INSTRUCTIONS
Turn broiler onto broil setting with rack placed 6 inches from the heat at the top of the oven.
Slice persimmons in half crosswise. Place halves cut side up on a rimmed baking sheet and drizzle each half with honey. Broil until tops are golden brown and caramelized, 6 -10 minutes. Remove from the oven, and drizzle with a little lemon juice, sprinkle with some candied ginger and lemon zest.
Meanwhile, in a medium bowl, whisk the mascarpone with the cream and the almond or vanilla extract until soft and creamy. Add in a squeeze of lemon juice.
Serve persimmons hot, each half topped with a dollop of the mascarpone mixture and sprinkled with candied ginger and lemon zest.
