Pomegranate Mint Relish

Crunchy, tart pomegranate seeds, fresh flavored mint and shallots make this relish perfect for tender endive, crackers, or even a salad.

SERVING SIZE

Makes 1 pint relish

INGREDIENTS

1 shallot, finely chopped

1 large pomegranate (about 1 ½ cups), seeds removed

1/2 cup olive oil

1 1/2 teaspoons lemon zest, finely grated

1 tablespoon fresh lemon juice

2 tablespoons apple cider vinegar

1 cup fresh mint, finely chopped

1/2 teaspoon sea salt

1/4 teaspoon freshly ground black pepper

 

INSTRUCTIONS

Combine shallot, pomegranate seeds, oil, lemon zest, lemon juice, vinegar and mint in a small bowl.  Season with salt and pepper. Chill then serve. 

To make this recipe the day before an event, prepare as directed with the exception of the mint. You can add the mint right before you serve.
