
This egg salad sandwich is filling and delicious. It would also be good in a lettuce wrap, if desired.
INSTRUCTIONS
While cooking the egg, put the shallots in a bowl with 1/2 teaspoon water (to cut the strong flavor).
Mash the hard-boiled eggs in a large bowl until mostly combined. Add the parsley, tarragon if using, shallot, mayonnaise and mix well. Add salt to taste.
Top on bread, lettuce leaves or just dig in with a fork!
