Egg Salad Sandwich

This egg salad sandwich is filling and delicious. It would also be good in a lettuce wrap, if desired.

SERVING SIZE

makes 2 sandwiches

INGREDIENTS

6 eggs, hard boiled (see our recipe for our favorite hard-boiled egg method)

1 tablespoon parsley, chopped

1/2 shallot, finely chopped

3 tablespoons mayonnaise (check out our easy homemade recipe)

1 teaspoon tarragon (optional)

salt & pepper to taste

bread

lettuce (we used butter lettuce)

 

INSTRUCTIONS

While cooking the egg, put the shallots in a bowl with 1/2 teaspoon water (to cut the strong flavor).

Mash the hard-boiled eggs in a large bowl until mostly combined. Add the parsley, tarragon if using, shallot, mayonnaise and mix well. Add salt to taste.

Top on bread, lettuce leaves or just dig in with a fork!
