
These delicious cookies are soft and chewy on the inside, yet have a sweet, crunchy exterior. This recipe is a healthier take on a traditional Snickerdoodle. You can even enjoy them for breakfast if you want!
INSTRUCTIONS
Note: The more apples you use, the batter will become more wet and take on a different consistency.
Preheat the oven to 350 degrees Fahrenheit. Using a stand mixer or hand mixer, cream together the butter, sugar and vanilla. Peel and grate the apple using a box grater or food processor with grater attachment. Add the grated apples to bowl.
In a separate bowl, sift together the flours, salt, baking powder and baking soda. Gradually add the dry ingredients to the bowl while mixing until thoroughly combined. (If the dough doesn't "come together," let it sit for a few minutes for the sugar to pull out the moisture of the apples -- don't panic, we promise it will work).
Scoop tablespoon-sized balls of dough and roll them in a mixture of 2 tablespoons sugar, 1/2 teaspoon nutmeg and 1/4 teaspoon cinnamon. Bake approximately 10 minutes on parchment paper or Silpat-lined baking sheet, until cookies are golden and are beginning to crack. Let them cool on the pan for 5 minutes before transferring to a wire rack.
