Simple Potato Salad

This Simple Potato Salad from BYOB: Build Your Own Burger by Jeff Rossman makes the perfect side dish for a weeknight meal, pot-luck, or weekend BBQ. The red potatoes have a lower starch content than a russet, so they hold their shape nicely. And their skin is thin and tender, so no need to peel! Not a fan of cilantro? Swap it out for flat leaf Italian parsley to maintain an element of freshness.

INGREDIENTS

2 1/2 pounds red potatoes, cut into quarters

1/2 large red onion, peeled and julienned

1/4 bunch cilantro, chopped

1 cup mayonnaise

1 tablespoon freshly ground black pepper

 

INSTRUCTIONS

Place cut potatoes in a large pot, and fill with enough water to just cover them. Bring to a boil, and cook until the potatoes are fork tender. Drain water, and allow to cool completely before moving on.

In a large mixing bowl, combine all other ingredients, add cooled potatoes, and toss until well coated. Season with salt if desired.
