Shaved Asparagus Pizza with Spring Onion

We love Deb Perelman of Smitten Kitchen. Her recipes don't disappoint, and her Shaved Asparagus Pizza recipe blew us away. It's basically a slice of spring and if you have dough ready to go, it only takes 20 minutes until you're stuffing your face with goodness.

SERVING SIZE

8-12 slices

INGREDIENTS

16 ounces pizza dough

1 bunch asparagus

1-2 tablespoons olive oil

1/2 teaspoon salt

1/8 cup Parmesan cheese, shredded

1/2 cup mozzarella, shredded or torn pieces

1 spring onion, thinly sliced (white and green parts) or green onion

salt and pepper to taste

 

INSTRUCTIONS

Preheat the oven to 500 degrees Fahrenheit, or as high as your oven will allow.

Using a vegetable peeler, shave the asparagus into strips. Put the strips in a bowl and season with olive oil and salt. Toss to coat.

Roll out the dough and place the dough on a sheet pan dusted with cornmeal. If using a pizza stone, follow manufacturer's instructions. Sprinkle the Parmesan cheese over the top and season with pepper. Add the asparagus strips, followed by the mozzarella cheese and the white parts of the spring onion (a green onion is just a smaller spring onion, so if spring onions aren't in season, it's absolutely fine to substitute green onion).

Bake for 10-15 minutes, until the cheese is melted and bubbly. Remove from the oven and sprinkle the green part of the spring onion over the top. Cut into slices and dig in.
