Herb Roasted Fingerling Potatoes

Due to their thin skin, fingerling potatoes don't need to be peeled. Can you say time saver? (Plus, they're totally delicious).

serves 2-4

INGREDIENTS

1 pound fingerling potatoes

1 tablespoon olive oil

1 garlic clove, finely minced

1 teaspoon fresh rosemary, finely minced

1 teaspoon fresh thyme, finely minced

1/2 teaspoon sea salt

1/4 teaspoon cracked pepper

 

INSTRUCTIONS

Preheat the oven to 400 degrees F.

In a medium bowl, toss fingerling potatoes with the olive oil, garlic, rosemary, thyme, sea salt and pepper. Pour them onto a sheet pan and roast for 15 to 20 minutes, until tender.

Serve hot.
