Summer Heirloom Tomato Salad

This simple summer heirloom tomato salad lets the tomatoes really shine. This would make a great side salad to any dish and would be a great crowd pleaser at a barbecue.

INGREDIENTS

2 tablespoons red wine vinegar

1 teaspoon Dijon mustard

1 teaspoon salt

1/2 teaspoon sugar

1/2 teaspoon black pepper

1/4 cup olive oil

2 pounds mixed heirloom tomatoes, quartered or cut into wedges, depending on size

1 pint cherry tomatoes, halved

1 fresh mozzarella ball, sliced

1/2 cup basil leaves, chopped

 

INSTRUCTIONS

Whisk together vinegar, mustard, salt, sugar and pepper in a large bowl. Add oil in a slow stream, whisking constantly until dressing is emulsified.

Add tomatoes and toss well.

Place salad on serving platter and arrange mozzarella and basil on top. Season with salt and pepper to taste.
