Chilled Cucumber Soup

This is a light and refreshing soup, perfect for the hot days of summer.

INGREDIENTS

1 cucumber, sliced into 1/2" pieces

2-3 cups chicken or vegetable broth

1/4 cup green onion, chopped (white part only)

1 tablespoons dill, parsley, chives or cilantro, chopped, to taste

1 teaspoon yogurt for garnish

 

INSTRUCTIONS

Puree the cucumber pieces and green onion in the chicken or vegetable broth with a food processor or blender. Pour into a bowl and chill for 30 minutes to 1 hour. Serve with the herb garnish and a dollop of yogurt.
