There are several factors that contribute to the unique and delicious flavor of this certified organic, minimally processed butter. The rich, deep yellow color is due to the high beta-carotene content in the sweet, coastal grass that the cows graze on. The 85% butterfat content means it is very low-moisture, allowing it to make flakier pastry crusts and making it burn less easily in a frying pan. The European-style butter is created using a slower, more traditional method in the creamery’s old-fashioned 1950s butter churn. This artisan style process takes much more time and produces about the same amount of butter in one week that a typical manufacturer makes in one hour. You will definitely taste the difference in this pure butter made with simple ingredients.
