Brilliant Broccoli Hummus

Roasted, steamed, stir fried - you've probably tried broccoli in all these ways, but this broccoli hummus is a wonderful, fresh way to enjoy this cruciferous veg. No heat required!

SERVING SIZE

serves 8-10

INGREDIENTS

1 1/2 cup raw broccoli, chopped

1 1/2 cup raw zucchini, chopped

1/2 cup raw carrots, chopped

1/3 cup raw tahini

2 tablespoon nutritional yeast

1 tablespoon organic mustard

1/2 teaspoon cumin

3 tablespoons lemon juice

Sea salt and freshly ground pepper to taste

INSTRUCTIONS

Place the broccoli, zucchini and carrots into a food processor and process until finely chopped. Add the tahini, nutritional yeast, mustard, cumin and lemon juice and continue blending until smooth, stopping regularly to scrape the sides. Season with salt and pepper to taste. For thinner hummus, add additional lemon juice. Serve with your favorite crackers or pita bread.
