Arugula Pear Salad

This arugula pear salad excites the tastebuds with spicy arugula, tangy lemon, sharp blue cheese and the mild sweetness of organic pear. Don’t let the simple ingredient list fool you, this salad has all the flavors of a much more complicated dish; but don’t worry, your secret is safe with us.

INGREDIENTS

1/2 cup organic walnut halves, toasted

5 cups organic arugula, cleaned and dried

1 organic pear, cored and sliced lengthwise (Bosc, D'Anjou or Bartlett will all work well)

1 organic lemon, juiced

3 tablespoons extra-virgin olive oil

1 teaspoon dijon mustard

Salt and pepper, to taste

4 ounces blue cheese crumbles

INSTRUCTIONS

Combine the arugula, sliced pear, and nuts in a medium bowl.

In a small bowl, whisk together the lemon juice, olive oil, mustard, and salt and pepper. Pour over the salad mixture, and toss lightly with fingertips. Transfer to serving plates, then top with blue cheese crumbles. Serve immediately.
