Plum Crumble

Organic plums are a special treat, and this plum crumble recipe is the perfect combination of sweet and tart. Finishing in a brilliant purple color, the crunchy crumbles and tart plum filling make this dish the ideal end to a summer evening BBQ. Pair with fresh vanilla ice cream and top with whipped cream for a truly delectable dessert.

INGREDIENTS

For the filling:

2 pounds organic plums, pits removed and cut into 1/2 inch wedges

1/2 cup organic sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

1/2 teaspoon coarse salt

For the topping:

12 Tbs unsalted organic pasture butter, room temperature

1/2 cup brown sugar

2 cups organic all-purpose flour

1/2 teaspoon coarse salt

INSTRUCTIONS

Preheat the oven to 375 degrees F. In a medium bowl, stir together the plum slices, granulated sugar, lemon juice, cornstarch and salt until evenly mixed. Pour the mixture into a greased deep-dish pie tin or 8x8 baking dish. Beat the butter and brown sugar until combined, then add flour and salt and mix until it resembled coarse crumbs. Gather small handfuls of the mixture and squeeze together, then gently break up the clump into large and small pieces and scatter over the filling. Place baking dish on a sheet pan to catch any drips, then bake covered for 50-60 minutes until the filling is bubbling, and the topping is golden brown. Cool for a few minutes, and serve warm with a scoop of vanilla ice cream.
