Caprese Kebabs

With organic cherry tomatoes and fresh organic mozzarella, this appetizer is a light and refreshing hand-held option for evenings on the patio. Mix things up by using a few different varieties of tomatoes—add some yellow and orange cherry tomatoes for an extra splash of color.

INGREDIENTS

Bamboo skewers

1 pint organic cherry tomatoes

1/2 pound mini fresh mozzarella cheese balls (or mozarella cut into 1/2 inch cubes)

1 bunch organic basil

1/2 cup balsamic vinegar

Olive oil

Salt and pepper to taste

 

INSTRUCTIONS

Thread a tomato, piece of mozarella, and basil leaf onto skewer. Repeat until each skewer is filled. Keep chilled. Pour balsamic vinegar into a small saucepan, and bring to a boil over high heat. Allow to cook until liquid has reduced by half, and looks thick and syrupy. Allow to cool. Place skewers on a serving platter, drizzle with balsamic reduction and olive oil, then sprinkle with a pinch of salt and pepper. Serve immediately.
