
This kale, pear, and mozzarella salad makes a wonderful side dish, or light lunch.
INSTRUCTIONS
Wash kale and remove leaves from the stems.
Use a salad spinner to remove extra water.
Put kale leaves in a large bowl.
With your hands, rub and squeeze the kale into bunches. This massage will break up the fibers in the kale leaves and make them softer in the salad.
Add walnuts, pear, and mozzarella cheese.
In a small dish, add garlic, lemon juice, Dijon, and oil.
Whisk to blend.
Pour dressing onto salad and toss to coat.
