These thick-cut oven fries have an amazing flavor from the celery root that add a little more depth than your typical potato fry.
INSTRUCTIONS
Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
With a vegetable peeler or knife, peel the rough outer shell of the celery roots. Cut them into 1½-by-½-inch match sticks.
Fill a medium pot with cold water and place the celery root sticks in. Bring to a boil and simmer for 2 minutes. Remove from the heat and drain.
In a large bowl, toss the celery sticks with the olive oil, salt, pepper, rosemary and thyme.
Place them on the prepared baking sheet and bake until golden brown, about 30-35 minutes. Flip them over at least once during baking to ensure even baking.
Once done sprinkle with a little fresh thyme and serve hot.
