
Green garlic has a milder, more delicate flavor than mature garlic. Toss it on the grill for a quick and easy side dish, or use as an ingredient in a frittata, soup, or paired with other spring treats like asparagus.
INSTRUCTIONS
Turn the grill on to hot. Rinse the garlic and trim off the roots, leave on the dark green tops. Brush or spray with the olive oil.
Spread the green garlic out on the grill, turning once or twice to brown, about 1-2 minutes on each side. The tops may get quite crisp – remove and discard any parts that are charred black.
Place them on a serving dish and sprinkle with salt and pepper. Sprinkle the orange zest over the top and serve warm.
