
This simple recipe is perfect for your summertime parties. Roasted apricots drizzled with a little olive oil, honey and topped with ricotta cheese. (You can also grill the apricots instead of roasting them if you prefer).
INSTRUCTIONS
Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.
Place apricots on baking sheet, cut side up. Drizzle with olive oil and season with salt and pepper. Sprinkle a few of the sprigs of herbs over the top, reserving some for a garnish. Roast the apricots until they are just hot and sweating, about 10-12 minutes.
Spoon the ricotta over apricots or serve on the side with a drizzle of honey just before serving.
Serve hot, room temperature or even chilled.
