Blueberry and Bell Pepper Salsa

This is a refreshing sweet, tart and tangy salsa. We love eating it with chips or crackers, but it would also be a delicious salsa for tacos.

SERVING SIZE

makes 4 cups

INGREDIENTS

3 cups blueberries, coarsely chopped

1 lemon, zested and juiced

½ teaspoon salt

¼ teaspoon black pepper

2 bell peppers, small dice

1 small cucumber, seeded, small dice

2 tomatillos, husked, washed and diced

1 bunch cilantro, coarsely chopped

2 jalapenos, seeded and minced

½ red onion, minced

 

INSTRUCTIONS

In a medium bowl, add the blueberries, lemon zest, lemon juice, salt and pepper. Let sit while chopping all the other ingredients.

Add in the bell peppers, cucumber, tomatillos, cilantro, jalapenos and red onion. Stir until combined.

Serve with your favorite tortilla chips or crackers.
