Watermelon, Feta and Balsamic Pizza

This "pizza" is a fun spin on a fruit salad that's sure to be a hit at your next BBQ. Sweet melon pairs beautifully with salty feta, and briny kalamata olives. Fresh basil brings an herbaceous pop, and balsamic reduction brings it all together.

SERVING SIZE

serves 4-6

INGREDIENTS

½ cup balsamic vinegar

1 watermelon

½ cup Feta cheese, crumbled

12 Kalamata or black olives, sliced in half

2 green onions, greens only, chopped

½ cup basil or mint leaves

In a small skillet, add the balsamic vinegar and bring it to a boil on medium-high heat. Once boiling, lower the heat to low and simmer until the vinegar is reduced by half, about 10-15 minutes. Let cool completely.

Meanwhile, slice the ends off the watermelon and cut the watermelon into 2-inch slices. Cut the watermelon discs into 4-8 slices (depending on watermelon size). Put the slices on a plate and sprinkle with cheese, olives, green onions and basil leaves. Drizzle the balsamic reduction over the top.

Serve immediately.
