Simple Satsuma Mandarin Sorbet

This simple refreshing sorbet is made with natural ingredients, and is a guilt free treat!  

SERVING SIZE

makes 3 cups sorbet

INGREDIENTS

1-2 tablespoons mandarin zest

3 cups fresh squeezed mandarin juice (strain out any seeds and pulp)

1 lemon juice and zest (optional) *use if you like your sorbet a little tart

 

INSTRUCTIONS

Scrub and wash the mandarins and lemon, completely removing all dirt and wax. 

Zest the mandarins and lemon, then set the zest aside. 

Squeeze out all the juice from the mandarins and lemon, straining out any seeds and pulp. Add the zest to the juice and pour the juice into a gallon zip lock bag.  Seal it securely and lay it flat on a tray and place it in the freezer until frozen solid, about 2-4 hours. 

Break up the frozen juice into small chunks and put it in a food processor or blender. Blend until smooth, stop and stir to break up chunks. 

Spread smooth sorbet into a metal loaf pan, and place back in the freezer to firm up completely, another 2 hours at least.

Scoop and serve. You can garnish with a few mandarin oranges slices and a little sprinkle of zest or serve by itself.
