Corned Beef Hash

This recipe is a perfect way to use (and enjoy) your leftover corned beef and potatoes from St. Patrick's Day.

INGREDIENTS

2 Tablespoons olive oil or butter

1 onion, diced

3 cloveds of garlic, minced

2 cups potatoes, precooked and chopped

1/4 teaspoon dried oregano

1/4 teaspoon paprika

2 cups leftover corned beef, chopped

salt and pepper to taste

 

INSTRUCTIONS

Heat the butter or olive oil in a medium skillet over medium-low heat.

Cook the onions until slightly translucent, about 3 minutes. Add the garlic and cook until softened, 1-2 minutes. Add oregano and paprika and heat until fragrant.

Increase the heat to medium. Add potatoes and corned beef to the skillet and heat until lightly browned, about 5-10 minutes. Season with salt and pepper to taste.

Garnish with freshly chopped parsley and serve immediately.

Note: For added flavor and texture, top with a poached or sunny-side-up fried egg.
