Kale and Potato Breakfast Hash

This breakfast hash is easy to make and looks so pretty, it's sure to wow any guests.

INGREDIENTS

1 pound fingerling potatoes, sliced

2 teaspoons olive oil

1/2 bell pepper, thinly sliced

2 cloves garlic, chopped

1 head lacinato kale, leaves torn and chopped

2 green onions, sliced

3 eggs

salt and pepper to taste

 

INSTRUCTIONS

If you have a pan that is safe to go in the oven, preheat the oven to 400 degrees Fahrenheit. Otherwise, you can do this all on the stove top.

Heat the oil in a large saute pan over medium-high heat. Saute the potatoes for 5 minutes, until browned. Add the peppers, garlic and green onions and cook for 2 minutes until softened. Add the kale and cook until wilted, about 1 minute. Season with salt and pepper.

Create three small wells in the pan and crack the eggs. Turn the heat down to medium-low and cook until the eggs are cooked through, about 10 minutes. Otherwise, put the pan in the oven and cook for 6 minutes until the eggs are done. Enjoy immediately!
