Homemade Pumpkin Bread

One of the best part about the holiday season is all things pumpkins! This bread is delicious and filling, perfect for rushed mornings or a sweet treat.

SERVING SIZE

makes 1 loaf

INGREDIENTS

1 handful walnuts (approximately 1/4 cup)

1/3 cup water

1/2 cup olive oil

2 eggs

1 cup sugar pie pumpkin puree (see our blog for step-by-step instructions)

1/4 teaspoon ground ginger

1/2 teaspoon ground cloves

1/2 teaspoon ground nutmeg

1 teaspoon ground cinnamon

1/2 teaspoon salt

1 teaspoon baking soda

1 3/4 cups flour

1/2 cup brown sugar, packed

1/2 cup white sugar

 

INSTRUCTIONS

Preheat the oven to 350 degrees Fahrenheit.

Using a stand mixer or a whisk, mix together both sugars, flour, baking soda, salt and spices. Make a well in the center of the bowl and add the pumpkin puree, eggs, olive oil and water. Mix until everything is incorporated, but don't over mix. Add in the walnuts if using a stir to combine.

Pour the batter into a loaf pan and bake for approximately one hour, or until a toothpick inserted into the middle comes out clean. Let cool and enjoy.
