Sauteed Collard Greens

Sauteing collard greens is probably the most traditional preparation for this veggie. We've added some red wine vinegar to this recipe to add flavor and cut some of the bitterness collard greens can sometimes have.

SERVING SIZE

2 as a side

INGREDIENTS

1 tablespoon olive oil

2 cloves garlic, chopped

1/3 cup vegetable or chicken broth, or water

1 tablespoon red wine vinegar

1 bunch collard greens, leaves torn from stems, rinsed and roughly chopped

salt and pepper to taste

 

INSTRUCTIONS

Heat the olive oil in a large saute pan over medium-low heat. Add the garlic and cook until softened, 1-2 minutes. Turn the heat up to high and add the collard greens and broth or water. Cover and cook 5 minutes. Remove the lid and continue cooking until the water has evaporated if needed. Remove from heat and stir in the red wine vinegar. Season to taste with salt and pepper. Serve immediately.
