Meyer Lemon Pie

Meyer lemons are sweeter than regular lemons, making them ideal for this sweet and tart dessert.

INGREDIENTS

4 egg yolks

1 egg

1 can sweetened condensed milk

1/3 cup Meyer lemon juice

Graham cracker crust:

1-1/4 cups graham cracker crumbs

1 teaspoon cinnamon

1/4 cup packed brown sugar

3/4 stick unsalted butter, melted

 

INSTRUCTIONS

Preheat the oven to 350 degrees Fahrenheit. Mix the egg yolks and egg with a whisk. Thoroughly whisk in the condensed milk, then add the lemon juice and mix until combined.

To make the crust, combine all the ingredients and press into a 9-inch pie pan. Pour the batter into the pie pan and bake for 15-20 minutes. Cool thoroughly, then refrigerate for a few hours until chilled.

Serve; topping each slice with whipped cream.
