Mushroom Toast Appetizer

This savory mushroom toast appetizer is quick to make and is a real crowd pleaser.

SERVING SIZE

makes 12 toasts

INGREDIENTS

12 slices baguette, cut on bias in 1/2-inch thick pieces

1 tablespoon butter

1 tablespoon olive oil

1 large shallot, minced

1/2 onion (we used white), minced

1/2 pound King Trumpet mushrooms, brushed clean and thinly chopped

3 tablespoons sour cream

handful parsley, chopped (optional)

 

INSTRUCTIONS

Using a broiler or grill, toast the baguette slices until golden brown, or desired doneness.

Heat a skillet over medium heat. Add the butter and olive oil. When hot, add the shallots and onion. When translucent and beginning to brown, add the mushrooms.

Once the mushrooms have wilted, about 3-4 minutes, add the salt and pepper to taste. Add the sour cream and stir to combine. Take off the heat and spread a generous amount onto each piece of toast.

Garnish with parsley if desired. Serve immediately.
