
Not only are these popsicles pretty, but the tangy layer of papaya is so delicious with the creamy coconut.
INSTRUCTIONS
Cut the end off the papaya and slice the papaya in half. Gently scoop out the seeds and discard. Peel the papaya carefully with the knife. Cut the papaya into cubes and put them in the blender.
Add the juice from the oranges and 1/2 tablespoon honey to the blender with the papaya and mix until smooth. Pour into another container with a spout to make it easy to pour.
Rinse out the blender and pour in the coconut milk, lime juice, zest, the other 1/2 tablespoon honey and coconut flakes. Mix until smooth.
Pour the papaya into the popsicle molds about 1/3 of the way up and let sit in the freezer for 10-15 minutes to solidify. Put in the popsicle sticks, then pour in the coconut milk mixture and put it back in the freezer to let it solidify. Finish with the last layer of papaya and freeze until the popsicles are solid, about 1 hour or according to your popsicle maker directions. (Because these popsicles are layered, you may need to freeze these longer than normal).
Run a little hot water on the popsicle mold to help them come out if they're stuck. Enjoy!
