INSTRUCTIONS
In a mixing bowl, grind sugar and mint leaves with a wooden spoon for several minutes to release oils from mint. The sugar will take on a greenish hue and the mint will break down into smaller pieces.
Add cream and milk. Stir to dissolve sugar.
Place mixture in the refrigerator for several hours, or overnight. Strain mixture and discard mint.
Fill popsicle molds and freeze for several hours.
