
This dressing gets reduced down with strawberries and has a sweet and vinegar-sour flavor that is good as a dip, served over cream cheese with crackers, as a marinade or a dressing.
INSTRUCTIONS
In a medium-sized saucepan, boil the balsamic vinegar, red wine vinegar and strawberries. Cook for 15-20 minutes, until the mixture is reduced by 3/4 (to approximately 1/2 cup). Add the sugar, diced onion and parsley and turn the heat down to low.
Simmer 10 minutes and remove from heat. Allow to cool, then gradually whisk in the olive oil. As this dressing is thicker, it is delicious as a dip with vegetables, spread over cream cheese and crackers, as a marinade or used as a typical dressing.
