Creamy Celery Root Soup

Creamy Celery Root Soup

This is an easy one pot soup recipe.  It is deliciously creamy without any actual cream.  


serves 2-4


2 tablespoons olive oil olive oil

1 onion, coarsely chopped

2 celery stalks, diced

2 celery roots, peeled and cut into 1-inch cubes

4 cloves garlic, finely minced

1 bay leaf

4 cups vegetable broth

1 tablespoon butter (optional)

1 teaspoon sea salt

¼ teaspoon freshly cracked pepper

1 teaspoon fresh thyme, minced



In a large pot on medium high heat, heat the olive oil. Add the onion, celery and celery root. Sauté until the onions become soft and translucent, about 5 minutes. Add the garlic and sauté until fragrant, about 1 minute.  

Add the bay leaf and broth. Bring to a boil, lower heat and simmer until veggies are soft and tender, about 20 minutes. Remove the bay leaf.

In a food processor or blender, blend the soup until smooth. Add the butter, salt and pepper to taste.

Sprinkle on the fresh thyme and serve hot.
