These toasts are a delicious and easy appetizer, though the avocado-pickled onion combo would also work well on a slice of breakfast toast with an egg on top.
INSTRUCTIONS
Note: Make the pickled onions two days before you plan on making the toasts. Click here for the Pickled Spring Onion recipe.
Slice the baguette diagonally and toast the slices until golden brown. Cut the avocados in half and remove the pit. Carefully remove the peel from the avocado and cut the flesh into slices. Squeeze the lemon over the top to prevent the avocados from browning.
Take a slice of avocado and place it on top of one of the toasted baguette slices. Smash the avocado onto the toast with a fork and sprinkle coarse sea salt over the top. Dollop the pickled onions on top. Serve immediately and enjoy!
