Tomato, Arugula & Shaved Parmesan Salad

This is a delicious and quick side salad that takes just minutes to make. The crisp arugula and heirloom tomatoes pair perfectly in this light summer salad.

INGREDIENTS

1 pound tomatoes (we used heirloom)

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 clove garlic, minced

1 cup arugula

salt and pepper to taste

2 ounces Parmesan cheese, shaved into strips (optional)

 

INSTRUCTIONS

Core and chop the tomatoes and put them in a large salad bowl. In a small bowl, whisk the oil, vinegar and garlic until combined. Season to taste with salt and pepper. Pour the dressing over the tomatoes and toss to coat. Set aside to let the flavors blend, about 5 minutes.

Add the arugula and toss to combine. Adjust seasonings if needed and place in serving bowls. Garnish with Parmesan if using.
