Radish Salad with Apple, Avocado & Egg

Not sure what to do with radishes? This salad is perfectly balanced due to the crunch of the radishes and apple, the creaminess of the avocado and the delicious dressing. We bet you'll be a radish lover after trying this salad!

INGREDIENTS

salt and pepper to taste

4 tablespoons olive oil

1 spring onion, chopped (white part only) or 1 green onion (white and green part)

2 cloves garlic, crushed

1 1/2 tablespoons white wine vinegar

1 1/2 teaspoons honey

1 teaspoon Wilder Honey Jalapeno mustard

1/4 cup walnuts, roughly chopped (optional)

Manchego cheese, shaved

1 avocado, diced

1 apple, thinly sliced (we used Honeycrisp)

2 hardboiled eggs, chopped (see our blog for tips on hardboiling eggs)

1 bunch icicle radishes, thinly sliced

1 bunch red radishes, thinly sliced

1 head butter lettuce, roughly chopped

 

INSTRUCTIONS

Make the dressing: In a bowl, combine the mustard and honey and whisk until the honey is incorporated. Whisk in the vinegar, garlic and spring onion. Drizzle in the olive oil while whisking and mix until combined. Season with salt and pepper to taste.

In a large bowl, combine the butter lettuce, radishes, eggs, apple, avocado, cheese and walnuts. Drizzle the dressing over the top and toss to combine.
