Skyr is the traditional yogurt of Iceland that has been made for over 1,000 years. It is a strained yogurt made by incubating milk with live active cultures. The water naturally found in milk, called whey, is strained away to make a much thicker, creamier, and more concentrated yogurt. It takes approximately four times the milk to make one cup of siggi’s skyr compared to non-strained yogurt.

About the producer
Siggi Hilmarsson was disappointed by the overly sweet yogurts lining shelves, so he began crafting authentic skyr, which requires four times more milk, in his New York apartment using his mother's recipe. It soon became a farmers' market sensation and inspired Siggi to leave his day job.
His commitment to simplicity remains unchanged from those early kitchen experiments, creating a yogurt without unnecessary ingredients or excessive sweetness. Siggi's nostalgia for his childhood in Iceland led him on a mission to recreate the thick, creamy skyr he missed. Now, he's sharing that time-honored approach through every spoonful of yogurt.
